Follow these directions to see just how easy it is to make delicious crispy potato accordions.
Step 1
First, preheat your oven to 400 degrees and thoroughly clean the potatoes.
Step 2
Peel the potatoes and cut the ends off to square them up.
Use a sharp knife to cut the potato slice lengthwiseinto 1/4-inch slices to create rectangles. Cut thin slices because thicker slices won’t get as crispy.
Step 3
Place the potato rectangles on your cutting board. Place skewer sticks parallel to either other and place potato slicesbetween skewers to control the depth of the cuts.
Cut vertical slices halfway through on one side– the skewers help you not cut all the way through.
Step 4
Flip the potato over and repeat the process.

Gentlystretch out the potato, starting at the bottom and work towards the middle. This part is so much fun!

Place the potato slices into a bowl of cold water to rinse.

- 2 large Russet Potatoes
- 1/3 cup unsalted butter, melted
- 2 tablespoons fresh parsley chopped (optional) 1 garlic clove, minced
- 1⁄4 tsp salt
- 1/8 tsp black pepper
- 1⁄4 tsp oregano
- 2 tablespoons grated parmesan
Instructions
- Preheat oven to 400.
- Peel and cut potatoes into long rectangles.
- Place potato between skewers to control the depth of the cuts
- Cut vertical slices halfway through on one side.
- Flip it over and cut diagonal slices halfway through.
- Place the potatoes into a bowl of water to rinse.
