HEALTHY RED POTATO SALAD

I love a good potato salad. But most potato salads are full of fat and drowning in mayonnaise. I have several relatives who can’t eat potato salad because the mayonnaise upsets their stomachs.

So, I was excited to find this recipe on Side Delights’ HUGE recipe database for a healthy red potato salad. It’s the perfect blend of classic and healthy to please every single person at our extended family barbecues.

The mayonnaise is swapped for nonfat yogurt. I used my favorite nonfat Greek yogurt for extra creaminess. But the potato salad dressing is still flavorful thanks to yellow mustard, dill pickle juice, red onion, celery, and parsley. And, of course, some salt and pepper.

I also added some boiled eggs to the recipe because in our family it’s not a classic potato salad unless it has boiled eggs. Feel free to skip them if you want a red potato salad with no egg.

In addition to the lightened-up dressing, there is added nutrition thanks to the peels of the red potatoes.

Potato peels are packed with iron. While a whole potato can give you 1/4 of your daily iron, 88 percent of that iron is from the potato skin. The potato skins also contain fiber and protein, along with a variety of vitamins and nutrients.

MAKING RED POTATO SALAD EASY

Red Potato Salad Recipe (3)

I was so excited to learn about Side Delights’ Steamables. They have triple washed potatoes sealed in a bag, so you can simply steam them in the microwave. It’s a great trick for quickly cooking potatoes for an easy side.

But the Steamables are also perfect for quickly cooking potatoes to make potato salad, mashed potatoes, or any other dish that needs the potatoes pre-cooked.

I love that I can gather my ingredients and get everything chopped while the potatoes are steaming in the microwave.

Red Potato Salad Recipe (4)

The potatoes come out perfectly fork tender. But because the potatoes were steamed, they are not water logged as can happen with the traditional boiling method.

I timed myself making the recipe. I had pre-boiled eggs from the grocery store, so my only cooking was steaming the potatoes. From the moment I pressed start on the microwave, to when I had everything mixed together and ready to refrigerate, prep time was just 20 minutes!

That means you can quickly throw this red potato salad together the night before. Or whip it up it an hour before your potluck, and refrigerate it for a short time before you leave.

You can definitely serve the potato salad right after you mix it together, but the flavors are much more developed after at least an hour in the fridge.

HOW LONG TO BOIL RED POTATOES FOR POTATO SALAD?

If you don’t have a microwave, or prefer the old fashioned method of boiling, you can do that too. Side Delights has regular 1.5 pound bags of Petite Red Potatoes that are perfect for boiling.

So how long do you cook red potatoes for potato salad? Get a pot of salted water boiling and add the potatoes. Cook for about 10-15 minutes, until fork tender but still slightly firm.

The petite red potatoes will need just 10 minutes. Larger red potatoes will need 15 minutes.

FAQs

How long will homemade potato salad last in the refrigerator? ›

According to StillTasty.com, prepared potato salad—whether homemade or store-bought, dressed with vinegar and oil or mayonnaise—will stay fresh in the refrigerator for up to five days if stored properly.

How to keep potatoes from falling apart when making potato salad? ›

Taste of Home Deputy Food Editor James Schend suggests adding a tablespoon or two of apple cider vinegar to the water before it comes to a simmer, which will help create a “crust” on the potatoes. This way, they'll be less likely to fall apart.

Why don't you peel potatoes for potato salad? ›

There's no reason at all, so my advice is to leave the skins on. The skin on a potato adds a nice texture and flavor to the potato salad and it's also the healthiest part.

Are red or russet potatoes better for potato salad? ›

To cook potatoes for potato salad, you should boil them whole until al dente. Let them cool, skin them and cut into eatable chunks. Red potatoes work best but russets will do also.

How long does homemade potato salad keep for? ›

Potato salad can be served right away or refrigerated until ready to serve. It's best served the same day it's made, but leftovers will keep for about 3 to 4 days (less if the salad has sat out at room or warm temperatures for any length of time). You can also boil the potatoes and fry the bacon a few days ahead.

Can I eat 7 day old potato salad? ›

Just like regular potato salad you have up to five days to consume it, if stored properly. Is it safe to eat week-old potato salad? The USDA doesn't recommend consuming potato salad that's more than five days old.

Is it better to boil potatoes whole or cut up for potato salad? ›

Drop a whole russet into the pot and by the time the outside has cooked through, the inside will still be raw. Larger potatoes should be cubed to ensure they cook evenly (peeled first if desired). Smaller potatoes tend to have thin skins and can be boiled whole, no peeling required.

When making potato salad do you cut potatoes before boiling? ›

Dice unpeeled potatoes into uniformly-sized pieces. Place in cold water, bring to a boil, then simmer until tender.

Do you boil potatoes whole or cut? ›

Starchy potatoes tend to fall apart or become water-logged when boiled, so I recommend boiling them whole instead of cubed.

What's the best type of potato for potato salad? ›

Waxy potatoes are generally considered the best for classic potato salad because they retain their shape, you don't have to peel them, and they have a smooth texture. People who prefer a creamy potato salad that soaks up dressing like a sponge, though, opt for a starchy potato.

Do I cover potatoes when boiling? ›

In a large pot, add potatoes, 1 tablespoon salt, and cold water to cover by 1 inch. Bring to a boil, reduce heat to medium, and cook uncovered until potatoes are tender and can easily be pierced by a knife, about 10 to 15 minutes (20 to 25 minutes for larger potatoes).

What are red potatoes best for? ›

Red potatoes are great for roasting, cooking in soups, or boiling or steaming for potato salad. The waxy nature of the flesh means they'll maintain their shape, but it also means they will get gluey when overworked, so you'll want to choose a different potato for mashing.

How to make potato salad Martha Stewart? ›

Directions
  1. Put potatoes in a large pot of salted water; bring to a boil. Cook until just tender, 20 to 25 minutes. Drain; let cool.
  2. Stir together mayonnaise, lemon juice, mustard, and dill; season with salt and pepper. Peel potatoes; cut into 1-inch chunks. Fold into mayonnaise mixture.

Why is my potato salad watery? ›

Potatoes can retain moisture. To prevent this, drain the potatoes very well in a colander or pot. Allow all the steam to escape the potatoes before mixing them with the dressing and other ingredients. Steaming the potatoes instead of boiling them is a good way to ensure that excess moisture isn't trapped inside.

How long does potato salad with eggs last in fridge? ›

Did the potato salad get made up and then refrigerated right away and you just have some leftover? If this is the case then it should easily last 3-4 days.

Is potato salad good after one week? ›

How long is potato salad good for if it is stored properly? 3 to 5 days, if stored properly in the refrigerator. Bacteria grow rapidly at temperatures between 40 °F and 140 °F; potato salad should be discarded if left out for more than 2 hours at room temperature.

Can you freeze potato salad with egg and mayonnaise? ›

Mayonnaise doesn't freeze well, same with celery and eggs. The potatoes will get an off color from the mayo, which separates. So, I would not suggest freezing potato salad. Also, from a food safety standpoint, once the dairy is mixed with the potato it is best to consume right then or at the latest, the next day.

What is the maximum number of days that potato salad may be kept if it remains at a temperature of 41 degrees or lower? ›

Potato salad kept at 41 F (5 C) or lower is typically safe to eat for 3-4 days. This timeframe is set to prevent the growth of bacteria such as Clostridium botulinum. Even in refrigeration, it's important to consume perishable foods like potato salad in a short amount of time to ensure safety.
