This EASY Sweet Potato Casserole Recipe has been in my family for generations! Sliced sweet potatoes topped with butter and brown sugar – it’s not the holidays without this side dish!

This particular sweet potato casserole recipe has been on my family’s Thanksgiving table for as long as I can remember! My mom knocked it out of the park with this one for sure and I’m proud to be sharing it with you today!

This sweet potato casserole first appeared here on Mostly Homemade Mom food blog in 2012yes you read that right! Formerly named Layered Sweet Potato Casserole, it’s been a Pinterest favorite ever since.

Can you make sweet potato casserole ahead?

Absolutely! Make up the dish, cover tightly with foil, and keep in the fridge for up to 3 days before Thanksgiving. When ready, bake as directed in the recipe instructions – allowing an additional 10 minutes or so to account for the chill.

How do you boil sweet potatoes for sweet potato casserole?

Pretty simple, just lay the sweet potatoes in the bottom of a large stock pot and cover the sweet potatoes with water, bring to a boil, and cook until soft – anywhere from 15 – 40 minutes depending on the size of the sweet potatoes.

How do you make this easy sweet potato casserole recipe?

Cover the potatoes with about an inch of water and bring to a boil. Continue to cook until the sweet potatoes are soft and are easily pierced with a fork. Drain and allow to cool to room temperature.

Peel and slice the sweet potatoes about 1 inch in thickness. Slice the stick of butter into 16 slices.

Place one layer of sweet potatoes in the bottom of the baking dish. Top with 5 slices of butter and 1/4 cup brown sugar. Repeat layers twice more and then bake.

Can you freeze this sweet potato casserole recipe?

Yes! Freeze before baking and then allow to thaw before baking in the oven. You could also freeze leftover sweet potato casserole as a side dish for a future meal as well!
